Ingredients
2 tbsp of Ithaca Lemon Beet Hummus
2 eggs
2 slices of rosemary bread
3 tbsp of cottage cheese
Half of an avocado
Instructions
Toast bread in a medium hot pan with some butter or olive oil
Boil eggs for about 6.5 minutes for a semi-jammy yolk
Place eggs in an ice bath to cool. After 5 minutes, peel and halve.
Halve an avocado and slice into thin sections
Add fixings to the plate
Sprinkle with salt, pepper, and sprigs of dill to taste
