Kalamata Olive Tartare

Ingredients
1 small cucumber
1 oz of red onion
1 oz of green olives
Half a cup of Ithaca Kalamata Olive Hummus
Pita chips (as many as the heart desires)
Instructions
Dice cucumber into half-inch sections
Lightly mince onion and green olives
Using a round cookie cutter, scoop hummus into the center and smooth into a tall, tartare-like disk
Top with onion, olives, and cucumber
Remove cookie cutter
Add pita chips (or your dipper of choice) and enjoy!
