Kalamata Olive Tartare

  • 1 small cucumber  
  • 1 oz of red onion  
  • 1 oz of green olives  
  • Half a cup of Ithaca Kalamata Olive Hummus 
  • Pita chips (as many as the heart desires)  
Kalamata Olive Tartare


  1. Dice cucumber into half-inch sections 
  2. Lightly mince onion and green olives  
  3. Using a round cookie cutter, scoop hummus into the center and smooth into a tall, tartare-like disk  
  4. Top with onion, olives, and cucumber 
  5. Remove cookie cutter 
  6. Add pita chips (or your dipper of choice) and enjoy!
