• What is the Cold Crafted Process?

    The reason our hummus tastes so fresh is because we use fresh ingredients like cold-pressed lemon juice and fresh raw garlic. If you heat these ingredients, they won’t taste fresh anymore!  So, unlike most brands who blend their hummus while the chickpeas are still hot, we cool the chickpeas and blend our hummus cold to keep the ingredients fresh.

  • Why doesn’t Ithaca Hummus contain preservatives like other popular brands?

    One of the promises we make to our community is we will never use any preservatives or artificial ingredients in any of our products. The role of preservatives in food is to stop the processes of oxidation and bacterial growth. You might be thinking that’s a good thing, but once you consider what chemical preservatives can do to your body, you may decide to avoid them in your diet. Studies have shown that certain chemical preservatives may be harmful to your intestinal tract because they can kill the “good bacteria” needed for digestion and nutrient absorption. As an alternative to chemical preservatives, we control the food safety of our hummus using a process call High Pressure Processing (HPP).

  • Why does Ithaca Hummus separate sometimes?

    Ithaca Hummus is all natural and free from chemical preservatives, stabilizers, binders, additives, and emulsifiers. You may notice a slight separation in the product from time to time. Not to worry, it is not harmful. Simply stir and enjoy. It’s natural!

  • What is High Pressure Processing (HPP)?

    High Pressure Processing (HPP) is a cold pasteurization technique by which products, already sealed in its final package, are introduced into a vessel and subjected to a high level of isostatic pressure (300–600MPa/43,500-87,000psi) transmitted by water.

    Pressures above 400 MPa / 58,000 psi at cold (+ 4ºC to 10ºC) or ambient temperature inactivate the vegetative flora (bacteria, virus, yeasts, moulds and parasites) present in food, extending the products shelf life and guaranteeing food safety.

    High Pressure Processing respects the sensorial and nutritional properties of food, because of the absence of heat treatment, and maintains its original freshness throughout the shelf-life.

  • Why do you use Organic Sunflower Oil in Ithaca Hummus?

    Our Organic High Oleic Sunflower Oil is considered one of the healthiest oils on the market today.  It has a light, neutral flavor, and light texture, which makes it ideal for the clean taste and texture we desire in our hummus. It consists primarily of monounsaturated oleic acids, at around 80 percent of the total. Saturated fats and polyunsaturated linoleic acid make up the balance, in equal proportions.

  • Why do you use vinegar in Ithaca Hummus?

    Instead of chemical preservatives or heat pasteurization, we control the food safety of our hummus with the HPP process, which requires us to ensure that it has reached a minimum pH level. We choose to use real food ingredients—a mix of cold-pressed lemon juice and vinegar—rather than adding artificial ingredients to reach that safe level.

  • Are Ithaca Hummus containers recyclable?

    Yes, our containers and lids are made of BPA-free polypropylene (PP5) which is not only recyclable, but also reusable and dishwasher safe. Thank you for recycling or reusing our containers!

  • Can I reuse Ithaca Hummus containers? Are they dishwasher safe?

    Yes, please reuse our containers! They’re great for organizing your junk drawer, leftovers, lunchboxes, dog treats, and more! Our containers are 100% BPA free, dishwasher safe, microwave safe, and freezer safe. Thank you for reusing them!

  • Are Ithaca Hummus containers BPA-free?

  • How long does Ithaca Hummus usually last?

    We recommend that you consume Ithaca Hummus by the expiration date marked on the side of the package. Once the package has been opened, we recommend that it be consumed within 7 days.

  • Can I freeze Ithaca Hummus?

    While we don’t recommend freezing Ithaca Hummus, we have customers that have reported positive results after freezing and thawing the product. If you choose to freeze Ithaca Hummus, you may notice slightly more separation after it is thawed. Not to worry, it is not harmful. This is because we don’t use any stabilizers, binders, or emulsifiers in our hummus. Simply stir and enjoy.

  • Is Ithaca Hummus certified Kosher?

    Yes, Ithaca Hummus is Kosher Pareve certified by Kof-K.

  • Does Ithaca Hummus contain any allergens?

    Ithaca Hummus is free from all FDA recognized food allergens including peanuts, tree nuts, wheat, soy, dairy, eggs, and shellfish.
